Sustain-a-bite Special Session
Session Summary
The session will explore cutting-edge innovations in the development of healthy, sustainable, and minimally processed plant-based foods, building on the interdisciplinary framework of the SUSTAIN-A-BITE project which started in October 2024. The session addresses a critical challenge in modern food systems: how to deliver nutrient-dense, affordable, and appealing minimally processed foods while significantly reducing environmental impacts associated with conventional food processing.
